Toscana Saporita Cooking School

Founded by cookbook authors Anne Bianchi and Sandra Lotti in 1994, Toscana Saporita cooking school resides on a beautiful Tuscan estate located 15 minutes outside the walls of Lucca, Italy. The estate is surrounded by thousands of olive trees used every fall to produce olive oil.

The school not only has a very unique setting but it is truly the only cooking school that provides classes not only for beginners and intermediate cooks but also for advance cooks.

Sandra Lotti and her staff lead the classes and instruction. At times guest chefs are invited to teach as well. Using varied techniques, true Tuscan recipes and hands on instruction the school will dazzle you with good food, wine, laughter and the tools to bring a taste of Tuscany back to your kitchen. All classes are taught in English.

Although the recipes change from season to season, here is a sample of some the menu items taught at the school:

Your week at a glance-

Sunday: The week will start with everyone arriving on Sunday. Depending on your arrival time, your lunch and/or dinner will be prepared for you by your chefs. During dinner you will get a breakdown of what your week will look like.

Monday, Tuesday, and Wednesday: Breakfast is at 9:30 am. Then your class starts at 10:00 am and lunch with wine is served at 1:15. At 3:00 pm you go on an English speaking tour to a nearby town and city, such as Lucca, Pisa, Viareggio (a seaside resort with a market and shops), Pietra Santa or Forte di Marmi (where you can visit a marble studio). After a short rest your dinner is served in the dining area at 8:00 pm.

Thursday: You have breakfast at 9:30am and go on tour right after breakfast. When you return lunch prepared by the chefs is served, and you take a short break. Then the fun starts. It’s pizza night! You will learn how to make pizza dough, the sauce and the toppings for the pizza. For your sweet tooth, you will also learn to make biscotti.

Friday: Breakfast is at 9:30 am. Your class starts at 10:00 am and lunch with wine is served at 1:15 pm. At 3:00 pm you go on an English speaking tour to one of the local towns mentioned earlier. Friday night’s dinner is also served at 8:00 pm.

On Saturday morning you depart for home or continue your exploration of Italy.

As a cooking school we understand that peoples’ diets may vary. We make accommodations according to dietary restrictions and allergies. We will need to know this prior to your arrival, as some ingredients may take longer to get.
